When healthy food was inaccessible, David started Salad Pride, a blog about making salads at his desk. In 2010, David made nutritious lunches in the office with his own ingredients. He turned his passion into international books called SaladLove, BreakfastLove, and SupperLove. That was just the beginning. David is now one of the world's greatest food explorers and art directors.

A few years into making gluten-free and vegan bread and cakes in its London restaurants in Neal's Yard and Mare Street, he realized he had found a good balance between taste, texture, and technique.

David took advantage of the lockdown to convert their favourite restaurant recipes into easy-to-cook ready mixes that maintained the same quality as the originals. GF Focaccia and Nomelette mixes with "charcoal" were the two products they asked me to help them develop.


The Challenge

Created to satisfy all gluten-free and vegan cravings, inspired by our London restaurant, and now ready for you to make at home.

  • Fun, joy, easy, tasty, simplicity, comfort, consistency.

  • Dry mixes have been designed to satisfy gluten-free and vegan people who still crave gluten-free focaccia and egg omelette, as well as those who wish to try new flavours.

    • A Occasionally, you have the opportunity to work with someone at three different points in their lives. This is me. I have known David since I worked with him for the first time in 2015 when he and Joy Rose cycled handcrafted lunch boxes to East and Central London offices.

    • The second time at his first cafe, SaladPride Cafe at Neal's Yard. In a tiny place (really tiny) where he served tasty and supercharging soups, salads, breakfasts, fresh juices, smoothies, and cakes.

    • Third, at Plant Hub in Hackney in 2019 with Lauren Lovatt and Antonio Alderuccio. A space dedicated to plant-based food research while serving comfortable plant-based food was the vision.

    • During this lockdown, David and Antonio founded finally the time to sit down and transform their favourite recipes into easy comfort food-ready mixes whilst still keeping the same quality of the original recipe people enjoy at the restaurant. It is my pleasure to help them with recipe testing, recipe development, costing, and packaging, and also develop recipes to inspire people to make the products at home. The product is now being taken a few steps further, and soon this gourmet gluten-free product will be available on Sun & Seed's website.

  • As well as plant-based options, these products were created to meet the needs of gluten-free consumers, as well as food lovers who enjoy tasting new foods and experimenting in the kitchen.

  • The food industry in London is extremely competitive and one of the best places to start and grow a business. Additionally, you will be inspired and supported by the best food and beverage startups and entrepreneurs. London offers the ideal environment for prototyping, testing, and fixing fast, and a large population is always eager to try new things, and gluten-free and vegan markets still have a lot of room for growth.

My goal was to take our restaurant bestsellers to the retail market by developing two new products. Carolina helped me refine and adjust our rough recipes into precise and reliable products with costing, quantities, connected recipes, and core images.

I enjoyed working with her because of her professional ethos, attention to detail, knowledge about the ingredients and processes, broad thinking and 360-degree vision.
